Huy Fong Foods, the maker of the most popular variety of Sriracha sauce, told distributors last week that it would halt production of all its products until at least September, rekindling fears of another prolonged shortage of the beloved condiment. For years, the manufacturer has had difficulty at times obtaining the red jalapeño chiles it needs to make the sauce. Huy Fong representatives declined to comment on Thursday. No other companies that produce Sriracha seem to be affected by the chile shortage. Why did Huy Fong Foods halt production?

Huy Fong Foods, the creator of Sriracha chili sauce, announced a shortage in 2022. In 2022, the Irwindale, California, company that created the sauce, Huy Fong Foods, notified customers that a "severe" chili pepper shortage was disrupting its production line. Since then, grocery stores and restaurants have been having difficulty keeping a reserve of the beloved hot chili sauce, causing third-party sellers to mark up prices. Underwood Ranches owner Craig Underwood filed a cross-complaint shortly after in 2018, claiming that Huy Fong breached its contract and committed fraud. A spokesperson for Huy Fong Foods did not respond to a request for comment sent during the weekend.

Strained supplier relations coupled with adverse agricultural conditions have left Huy Fong Foods' sriracha out of stock at many grocers nationwide. Underwood Ranches, a farm owned by Craig Underwood based in Ventura County, California, supplied Huy Fong Foods' peppers for 28 years. Huy Fong Foods claimed it overpaid Underwood Ranches for its crops from the 2016 season. Huy Fong Foods declined CNBC's request for an interview.

Sriracha can “really hit the sweet spot in terms of spice, sweetness, acidity, just that tang.”But a few months ago, supply began to dry up. So he, like some other Huy Fong enthusiasts, bought two large bottles on eBay for $35 each, about five times the usual price, to use at home. For the second year in a row, Huy Fong, the maker of the most popular variety of sriracha, is facing production issues, the company said in a statement this month, because of “a shortage of raw material” with “no estimations of when supply will increase.”

Huy Fong Foods, which makes the rooster-adorned bottled sauce, has been dealing with a years-long shortage of the chilis, which is hurting production and causing some shortages. At this time, we have no estimations of when supply will increase,” a Huy Fong spokesperson said. There’s been a shortage for the past three years, as Huy Fong has said that its chili peppers have consistently been in short supply.
